Sunsets in Santa
After a day of sun-drenched bathing, sky blues turn to sunset oranges and the night calls. This is our ode to all of its feelings and flavors.
As the hours of the afternoon start to disappear, and the loungers around you start to empty, you turn to one another and whisper, almost guiltily, “shall we go back to the room?”
Suncream needs to be scrubbed off skin. Sand needs to escape from the in-between of toes. And a fresh shirt or show-stopping dress needs to find a home on your newly bronzed body. Preparations must be made for the night ahead. A night of sunset drinks and seaside dinners.
Drinks on Terraces

Once you’ve captured the start of the night, either with the gardens as your setting or the sea as your backdrop, head downstairs to Miramare’s terrace for your usual or a twist on a classic. Like Bar Le Colonne’s Moscow Mule: Montelobos Mezcal, Ancho Reyes, lime salts, sparkling beetroot and ginger shrub.
You might also walk into Santa Margherita or take a short taxi to Portofino for a bright orange spritz in the buzzy harbor square.
Dinner by the Sea
As night follows day, so dinner follows drinks, with Vistamare the place to be.
Vistamare’s Art Nouveau space opens onto the terrace for panoramic coastal views, with chef Claudio Fortuna adding international flair to seasonal and regional ingredients.
Scallops are presented with Amaretto-flavored peaches. Small ravioli are stuffed with lamb and coated in a roasted red pepper reduction and parsley sauce. Turbot is accompanied by porcini mushrooms and artichoke. And the purple shrimp has come directly from the crystal waters of the Ligurian Riviera.
For those with space for something sweet, tuck into a meringue with vanilla cream, raspberry chocolate glaze, berry crumble and gel. Or pretend to share, but secretly monopolize, a white chocolate ganache with tulip and raspberry-puffed chocolate, crumble, berries and strawberries.
A Place of Fairy Tales
With the night sky now freckled with stars, retreat to the garden terrace for one final drink, or head upstairs to bed so you can dream about doing it all again tomorrow.
